Could a Paintball go through 1/2 inch wood......Hypothetically?

No a paintball won't go through 1/2 inch of wood unless it's completely rotten or balsa wood, MDF isn't wood so you asked the wrong question.

If your aim is to stop paintballs from going into neighbours gardens i would suggest an 8x4 foot sheet of board isn't big enough unless you're shooting at it from a couple of feet away, all it takes is 1 barrel break and the next shot could quite easily miss that board and go where you don't want it to. Site use netting to keep paint out of places it's not wanted to go, i'd suggest using that, builders scaffolding netting is ideal for this.
I thought MDF was wood :unsure: Will be getting some netting etc too, it’s more so that I don’t shoot the fence and incur the wrath of the Missus.

I’d say our garden is a decent enough size so it should be ok (y)

Medium density fibre board, it may be made from wood particles but that's it.

Remember a paintball could easily travel 150ft and the further away you are from what you're shooting at the more likely it's going to go wide, so if you just want to blast away at something you're better off and safer doing at close range.

Also, shooting onto wood makes a noise... shooting into netting or an old bed sheet is less annoying for your neighbours...

I won’t be shooting early in the morning :) I’ll get hold of some netting etc but I’m more worried about making a mess and the Missus shooting me instead:ROFLMAO:

The only thing that won't make a mess is to shoot at netting, anything else that paint could break on impact is going to make a mess .
