A couple basic anodizing questions:

How is the old finish removed before anodizing? (acid bath?)

How is the surface prepared before the new anodizing is applied? (bead blast for matte finish and sand polished in a tumbler for polished)

Yes an 'acid bath' is used. Bead blasting is also used along with another method.

As for the polishing it depends on the item.

The rest is all a bit secret squirrel im afraid.
